My interpretation of a Point Of View shot is when i scene is shot from the perspective of a subject usually from their eyes.
I think this technique was used in this scene to show the daily routine and actions of the person who's perspective we are viewing the scene from. The use of this technique is that we get to see the world in the eyes of a certain character, giving almost an insight into their life. The result is that it engages the audience, making them feel like they're part of the scene, by putting them almost in the shoes of that particular character and as a result, it grabs their attention more.
